Gains are generally taxed when realized, meaning when you sell. In the US, assets held more than a year usually get a lower long-term rate. In Canada, only a portion of a capital gain is taxable, and gains inside registered accounts such as a TFSA are not taxed. Rules change, so check your own situation.
